This is a really yummy cake for Christmas. GumDrop was always one of my family’s Favorite cake during the Holiday Season
Here is the recipe and a few pictures of how it is made, as I go along.. ENJOY!
1/2 lb. butter
1 8 oz. pkg. cream cheese
1 1/2 cups white sugar
2 1/4 cups flour
1 1/2 tsp. vanilla
2 tsp. baking powder
2 cups gum drops (sugared ones)
Cut your gumdrops into smaller pieces (I used scissors dipped in water so the gums don’t stick to the blades)
Coat the gumdrops with 1/4 of the flour and set aside until needed
Put the butter and sugar into a mixing bowl and beat until thoroughly blended
Add One egg at a time, beating each one until blended before you add the next egg.
Add the cream cheese and Vanilla and mix until blended
Add the flour, Baking Powder and mix. Add the Gumdrops last mixing only until blended
Pour into greased pans. either one tube pan or two regular size loaf pans. Today I used Aluminum pans from walmart and they were a bit smaller than the regular loaf pans. I did 3 smaller loafs.
Bake in 325° oven for 70-80 minutes
Let sit for 10 minutes on a cooling rack and then turn out onto the rack for cooling
